This is a Peruvian classic called “Pan con Aceitunas” which translates to “Bread with Olives” and that is exactly how I ate it growing up, bread with Peruvian olives. This is a very light and healthy snack, breakfast or even a lunch idea. I eat it without Mayonnaise but my children add it so that is an option. There are so many ways to prepare this sandwich but here’s how I eat it nowadays:
Ingredients
- 1 toasted Cuban roll
- 15 Kalamata olives (I use the Publix GreenWise Organic Pitted Kalamata Olives)
- 2 leaves of lettuce (I use Iceberg lettuce)
- Mayonnaise (optional)

Instructions
Step 1: Cut open the Cuban roll and put it while closed in a toaster oven. You can use any other type of bread as well.
Step 2: Once the roll is toasted, open the roll and place the lettuce leaves on the inside of the roll.
Step 3: Then place the Kalamata olives on top of the lettuce.

Step 4: If you choose to add Mayonnaise, spread it on the top inside part of the roll. Then close the sandwich and it’s ready.
